VINEYARDS AND HARVEST
Vineyard: Two of the most traditional vineyards in the Somontano region, known as Pagos of Lazan.   
Number of hectares: 70 hectares
Vineyard age: 20 years old
Yield: 4,000 kgs/hectare
Specific soil type: Clay loam.
Pruning:  Trellis  trained  vines  and  cordon  pruning with three spurs per branch and hree buds per spur.
Specific  microclimate:  The  contrast  in  temperature between  summer/winter  and  day/night  favours  the ripening cycle.   Fresh areas, which lengthen matura -tion.
Harvest style: Machine.

PRODUCTION & AGEING
Production process:  Fermentation at a temperature of  28ºC.    Maceration  is  prolonged  for  a  urther  21 days.    Malolactic  fermentation  takes  place  in  barrel.   Ageing  on  the  lees  is in  new  French  and  American oak  barrels  and  lasts  for  14  months  and  24  months in bottle. The reward is the well-rounded maturity of a classic.

TASTING NOTES
Deep  cherry  red  colour  with  shades  of  ruby.  Powerful on the nose with a pleasing aromatic blend  that  hints  at  cherries  and  marmalade, spices  such  as  cinnamon,  the  balsamic  herbs ofrosemary  and  lavender  and  subtle  shades  of incense  and  chocolate;  characteristic  of  noble maturity.
Hugely  flavoursome,  well  structured  and  de-lightfully persistent

SERVING SUGGESTIONS
Superb  with  roasts,  red  meats,  casseroles  and cured  or  semi-cured  cheeses.  Serve  at  a  tem-perature of 18ºC.
